Baked Salmon
- 1 (5 lb.) salmon (whole or piece), scaled and fins removed
- salt and pepper
- flour
- 6 Tbsp. butter, melted
- 1 large onion, minced
- 1 clove garlic, minced or pressed
- 1 Tbsp. Worcestershire sauce
- 2 tomatoes, peeled, drained of juice, seeded and chopped or 1 1/4 c. canned tomatoes, drained
- 1/4 c. (approximately) light cream
- beurre manie (1 Tbsp. butter and 1 Tbsp. flour kneaded together), if necessary
- lemon wedges
- parsley
- Rub the salmon inside and out with salt and pepper; dredge with flour.
- Put into a well-greased narrow baking pan.
- Bake in a preheated 425u0b0 oven for 15 minutes, then add the butter, onion, garlic, Worcestershire sauce and tomatoes.
- Reduce heat to 375u0b0. Bake for 30 minutes longer, basting frequently.
