Cacao Spelt Cookies
- 1/2 cup wholemeal spelt flour
- 1/2 cup plain flour
- 1/2 cup cacao powder
- 1 tsp baking powder
- 1/4 tsp salt
- 2/3 cup Natvia
- 1 tsp instant coffee
- 1/3 cup butter, melted
- 2 eggs
- 1 tsp vanilla extract
- 1/4 cup Natvia Icing Mix
- Sift flours (adding back the husks), cacao, baking powder and salt into a medium-sized bowl and stir through Natvia and coffee.
- Whisk together butter, eggs and vanilla and stir through dry ingredients to form a dough. You may need to massage it together with your hands. Don't be tempted to add any more liquid, it will come together.
- Roll into a log, wrap in cling wrap and refrigerate for 2 hours.
- Preheat oven to 175u0b0C and line a baking tray with baking paper.
- Place Natvia Icing Mix in a flat bowl or on a plate.
- To get evenly sized cookies, weigh the total amount of dough, then divide this amount by 20 (this will be the weight per cookie). Pinch required amount off log, roll into a ball, then press into icing mix and carefully flatten onto baking tray to around 7cm diameter.
- Bake for 10-12 minutes and transfer to a wire rack to cool.
