Citrus Salad In Orange Cups
- 1 c. honey
- 1 Tbsp. plus 1 tsp. lime juice
- 2 tsp. lemon juice
- 1 egg, beaten
- 6 large oranges
- 1 1/2 c. grapefruit sections
- 1 1/2 c. halved fresh strawberries
- 1/4 c. whipping cream
- Combine first 4 ingredients in a small saucepan; cook over medium heat, stirring constantly until thickened.
- Remove from heat; cover and chill 1 hour.
- Cut a 1/2-inch slice from the stem end of each orange, clip membrane and carefully remove pulp.
- (Do not puncture rind.)
- Drain orange cups on paper towels.
- Remove membrane from orange pulp, cut pulp into bite size pieces. Combine orange pieces, grapefruit sections and strawberries; drain.
- Spoon fruit mixture evenly into orange cups; set aside. Beat whipping cream until stiff peaks form.
- Fold into chilled honey mixture.
- Spoon mixture over orange cups.
- Yields 6 servings.
