Tortellini, Spinach & Turkey Sausage Soup
- 4 garlic cloves minced
- 1 onion small, diced
- 1 pound sausage casings hot Italian turkey, removed
- 1 can fire-roasted diced tomatoes
- 32 ounces chicken stock
- 3 teaspoons italian seasoning
- kosher salt
- freshly ground pepper
- 3 cups cheese tortellini frozen
- 12 ounces fresh spinach
- pecorino romano cheese grated
- In a large saucepan, cook sausage, onion and garlic over medium heat until sausage is browned and onions are tender, breaking up sausage with a spoon. Drain fat.
- Stir in tomatoes, broth, Italian seasoning a pinch of salt and a good grind of pepper. Bring to a boil.
- Add tortellini and cook for about 5 minutes, until pasta is tender.
- Add spinach, stir to combine.
- Serve with pecorino romano and additional pepper to taste.
