Organic Banana Cranberry Oatmeal Muffins
- 1/2 cup white flour organic
- 1/2 cup wheat flour organic
- 1 cup rolled oats
- 1 cup organic sugar
- 1 tablespoon baking powder
- 1 teaspoon ground ginger
- 1/2 teaspoon salt
- cranberries cup chopped
- 3 bananas medium organic
- 1/2 cup milk
- 1/4 cup organic coconut oil
- 1 egg beaten
- Preheat the oven to 400u0b0 F
- Mix together the flour, oatmeal, sugar, baking powder, ginger, and salt. Set that aside.
- Mash the bananas. Mix in the milk, coconut oil, and the egg. Mix in the chopped cranberries.
- Add the dry ingredients and mix until the flour mixture just moistened.
- Grease or line your muffin tins and fill 2/3 of the way.
- Bake for 20-25 minutes.
