Pasta With Meatballs
- 1 pound ground beef
- 3 tablespoons basil pesto
- 3 tablespoons fresh breadcrumbs
- 1 medium egg
- 1 zucchini grated
- 1 onion small, peeled and finely chopped
- 1 pinch paprika
- 1 tablespoon olive oil
- 13 ounces tomato puree with herbs
- 2 fresh tomatoes sliced
- 4 ounces mozzarella sliced
- 7 ounces pappardelle fresh, or other wide-noodle pasta
- basil leaves to garnish
- Place the ground beef in a large bowl with the pesto, breadcrumbs, egg, zucchini, onion and paprika. Season with salt and freshly ground black pepper. Knead to combine. Shape into 8 large meatballs.
- Preheat the broiler to medium. Heat the oil in a skillet. Add the meatballs and sear, turning, for 8 mins. Spoon the tomato puree into a baking dish. Place the meatballs on top, cover with the tomato slices and mozzarella. Broil for 5-10 mins.
- Meanwhile, cook the pasta in boiling, salted water according to the package directions. Serve with the meatballs. Garnish with the basil leaves.
