Sicillian Meat Roll

  1. In bowl, combine eggs and tomato juice.
  2. Stir in the bread crumbs, parsley, oregano, salt, pepper and garlic.
  3. Add ground beef.
  4. Mix well.
  5. On waxed paper or foil pat meat into a 10 x 8-inch rectangle pan.
  6. Arrange ham slices atop meat, leaving small margin around edges.
  7. Reserve 1 slice cheese.
  8. Tear up remaining cheese.
  9. Sprinkle over ham.
  10. Starting from short end, carefully roll up meat using paper or foil to lift.
  11. Seal edges and ends. Place roll seamside down in a 13 x 9 x 2-inch pan.
  12. Bake at 350u0b0 about 1 1/4 hours.
  13. Cut reserved cheese slice in 4 triangles.
  14. Lay atop meat.
  15. Return to oven until cheese melts (about 2 minutes).
