Apple Pecan Cheese Ball

  1. Combine cream cheese, cheddar, gouda, apple, scallion whites and salt in a medium bowl.
  2. Coat one side of a large piece of plastic wrap with cooking spray.
  3. Plop the cheese mixture onto the plastic wrap and using the plastic wrap to keep your hands clean, form the cheese mixture into a ball then completely wrap it and refrigerate for at least 15 minutes. Longer if you have more time.
  4. Combine the chopped pecans and scallion greens on a plate
  5. Remove the cheese ball from the fridge, remove the plastic wrap and roll it in the pecan mixture making sure to cover the surface thoroughly.
  6. Serve with a variety of crackers or crisp vegetables.
