Apple Pecan Cheese Ball
- 8 ounces cream cheese softened
- 1 1/4 cups extra sharp cheddar cheese shredded
- 1/2 cup gouda cheese not smoked Gouda!
- 1 apple finely chopped, I used Gala
- 2 scallions green onions finely chopped
- 1/2 teaspoon salt
- 1/2 cup toasted pecans finely chopped
- Combine cream cheese, cheddar, gouda, apple, scallion whites and salt in a medium bowl.
- Coat one side of a large piece of plastic wrap with cooking spray.
- Plop the cheese mixture onto the plastic wrap and using the plastic wrap to keep your hands clean, form the cheese mixture into a ball then completely wrap it and refrigerate for at least 15 minutes. Longer if you have more time.
- Combine the chopped pecans and scallion greens on a plate
- Remove the cheese ball from the fridge, remove the plastic wrap and roll it in the pecan mixture making sure to cover the surface thoroughly.
- Serve with a variety of crackers or crisp vegetables.
