Minute Steak With Cafe De Paris Butter
- 1 1/3 cups unsalted butter softened
- 5 tablespoons fresh flat leaf parsley diced finely
- 2 tablespoons fresh tarragon diced finely
- 2 teaspoons fresh sage diced finely
- 1 tablespoon fresh basil diced finely
- 1 shallot diced finely
- 2 cloves garlic peeled and diced finely
- 4 anchovy fillets diced finely
- 1 lemon juiced
- 2 teaspoons curry powder
- 4 cups arugula
- 1 red pepper julienned
- 4 radishes sliced finely
- 3 tablespoons olive oil
- 1 tablespoon aged balsamic vinegar
- 4 sirloin steaks
- oven fries frozen
- For the Cafe de Paris butter: mix the butter, herbs, shallot, garlic, anchovy, lemon juice and curry powder together. Roll the butter into a log shape, wrap it in plastic wrap and chill it for 2 hours.
- For the salad: mix the arugula, red pepper and radishes in a bowl and dress with oil and vinegar.
- When butter is chilled, cut the steaks in half, horizontally, and season to taste. Heat the grill plate or frying pan and cook them for 30 seconds each side, or to your preference.
- Serve steaks with oven fries (cooked according to packet directions), salad and a slice of butter melted over the top.
