Orange Madeleines
- 1/2 cup sugar
- 3 eggs
- 1 orange zest
- 1 tablespoon orange blossom water
- 3/4 cup wheat flour
- 1 teaspoon baking powder
- 7 tablespoons melted butter
- 1 pinch salt
- 1 tablespoon honey
- powdered sugar for dusting
- Preheat the oven to 190C.
- Sift flour, baking powder, and salt into a small bowl, set aside.
- Place the butter in a saucepan, melt over low heat.
- Once melted, remove from heat and let cool slightly.
- Put sugar and eggs in a mixer and beat for about 3-5 minutes, until they thicken and become like mousse.
- Mix in the orange zest, and then gradually add the sifted flour with the baking powder and salt until everything is well mixed.
- Mix a little of the egg mixture into the melted butter with the honey and orange blossom water, and pour it back in the egg mixture and beat some more. Remove to a bowl and put the dough in refrigerator for 20 minutes.
- Fill the madeline pan and bake in the oven for 8-10 minutes.
- Remove, and once cool, sprinkle the Madeleines with powdered sugar.
