Hearty But Healthy Turkey Chili
- 14 ounces diced tomatoes do not drain
- 2 Roma tomatoes or 1 large tomato diced
- 1 cup diced red onion
- 14 ounces black beans drained and rinsed
- 2 1/2 cups low sodium chicken stock
- 1 tablespoon jalapeno minced, add an additional tbsp if you like it at a medium spice level
- 2 tablespoons chili powder
- 1 teaspoon salt
- 1 tablespoon dried oregano
- 1 tablespoon dried basil
- 1 bell pepper I prefer to use red
- 6 cloves garlic minced
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 pound ground turkey I use 93% lean, 7% fat
- 1 cup frozen corn
- Heat oil in skillet in medium high heat. When heated, add in onions, garlic, jalapeno and red pepper till the onions look translucent (3-4 minutes)
- Next, add in the ground turkey. Cook till turkey is browned (5-6 minutes).
- After turkey is cooked, combine the rest of the ingredients starting with the chicken stock. At this point, you can stir and cover. Reduce to low heat.
- Stir every 10 minutes, for an hour. When stirring, make sure the broth has enough salt and chili powder- add more accordingly.
- Let it cool a bit, and enjoy! I prefer to eat this with an easy baked sweet potato with a touch of olive oil (400 degrees for 50 minutes).
