Apple Cider Vinegar-Pickled Tuna

  1. Add the tuna to a bowl. Season the tuna with salt and black pepper. Coat with flour and set aside.
  2. Add some olive oil to a skillet on medium heat. Mash the garlic into the oil and remove. Raise to high heat and sear the tuna pieces on all sides.
  3. Remove the tuna and set aside.
  4. In the same oil, add the onion, carrot, garlic, bay leaves, and peppercorns and fry until the mixture starts to caramelize.
  5. Add the vinegar and simmer 2 minutes. Add the fish stock and small amount of water. Cook on medium heat for about 10 minutes.
  6. Lower the heat to low and add the tuna. Cook for about 3 minutes. Serve warm.
