Apple Cider Vinegar-Pickled Tuna
- 2 1/4 pounds tuna fillet
- salt
- ground black pepper
- flour
- olive oil
- 2 onion
- 2 carrot
- 4 garlic cloves
- 4 bay leaves
- 12 peppercorns
- 1 cup apple cider vinegar
- 2 1/8 cups fish stock
- water
- Add the tuna to a bowl. Season the tuna with salt and black pepper. Coat with flour and set aside.
- Add some olive oil to a skillet on medium heat. Mash the garlic into the oil and remove. Raise to high heat and sear the tuna pieces on all sides.
- Remove the tuna and set aside.
- In the same oil, add the onion, carrot, garlic, bay leaves, and peppercorns and fry until the mixture starts to caramelize.
- Add the vinegar and simmer 2 minutes. Add the fish stock and small amount of water. Cook on medium heat for about 10 minutes.
- Lower the heat to low and add the tuna. Cook for about 3 minutes. Serve warm.
