Punjabi Cauliflower
- canola oil cooking spray
- 2 tablespoons clarified butter or Canola Oil
- 2 inches fresh ginger cut into thin matchsticks
- 1 onion sliced in half and then cut into 1/4" half-moon slices
- 1 garlic clove minced
- 1/2 teaspoon red chili flakes
- 1/4 teaspoon turmeric
- 1 teaspoon cumin seeds
- 2 teaspoons ground coriander
- 1/2 teaspoon Garam Masala
- 1 head cauliflower broken into pieces, rinsed
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper freshly ground
- Heat the clarified butter or canola oil in a stock pot.
- Add ginger, onions and garlic, cover and cook, covered, over medium heat for about 5 minutes
- Reduce the heat to low and cook for 8-10 more minutes.
- Uncover and add red chili flakes, turmeric, cumin seeds, coriander and garam masala. Cook an additional 30 seconds to 1 minute to allow for the flavors to infuse.
- Add cauliflower, salt and pepper and cook over medium heat for about 5-7 minutes.
- Reduce heat to low again and cook for another 10-12 minutes. Cauliflower should be tender after this.
- Serve hot and enjoy!
