Chicken And Shrimp Mozambique
- 12 shrimps med or large, shelled and deveined
- 1 tablespoon olive oil
- 1/2 onion chopped fine
- 1/2 tablespoon parsley chopped
- 1/2 pinch saffron or 1 packet sazon goya con azafran
- salt
- 1/2 tablespoon minced garlic
- 1/4 cup beer
- 1/2 cup white rice cooked
- 1 teaspoon lemon & garlic, FlavorGod seasoning
- 1 chicken tender cut it to small pieces so it cooks well
- In a medium mixing bowl add garlic, lemon & garlic, saffron, salt and pepper, mix gently.
- Add 2 T. olive oil to pan add onion; cook until soft (4-5 min.) over medium heat, add contents of bowl stir and cook another 1-2 min Add beer, bring to boil and reduce for 2 minutes over medium high heat.
- Add shrimp, chicken and parsley, cook over medium heat until chicken and shrimp are done, serve over rice.
