South Georgia Cabbage(By Martha Cass)
- 1 medium head cabbage
- 3/4 c. chopped celery
- 3 cloves garlic, minced
- 1/2 c. chopped green peppers
- 2 Tbsp. melted margarine
- 1 c. rich milk (half and half)
- 1 c. Cheddar cheese, shredded
- seasoning to taste
- Cut cabbage into quarters or eighths and cook in a little salted water for about 7 minutes or until tender.
- Discard water. Chop cabbage fine.
- Melt margarine in covered saucepan and put celery, peppers and garlic in pan.
- Cook over real low heat until vegetables are tender.
- Mix with chopped cabbage.
- Now stir in the rich milk, the shredded cheese and the salt and pepper as needed. Put into buttered baking dish and bake at 300u0b0 for 1/2 hour. Sprinkle buttered bread crumbs on top and cook for another 15 minutes.
