Simple Chocolate Cookies
- 1 15/16 cups pastry flour
- 4 tablespoons cocoa powder
- salt
- 3/4 cup butter at room temperature
- 1 3/4 cups vanilla sugar made by storing vanilla bean husks in a container of sugar
- 2 egg yolks
- 4 3/4 tablespoons dark chocolate melted and cooled
- Preheat the oven to 175 degrees Celsius.
- Sift together the flour, cocoa, and a pinch of salt. Set aside.
- Cream the butter and sugar together until white and fluffy. Add the egg yolks and chocolate, stirring constantly.
- Divide the dough into three parts. Roll each into a cylinder, cover with plastic wrap, and refrigerate for at least 2 hours.
- Remove the rolls from the refrigerator and cut into slices approximately 7 millimeters thick.
- Bake the cookies for 14 to 15 minutes. Cool on cookie racks before serving.
