Banana Walnut Bread
- 3 eggs
- 2 tablespoons coconut oil
- 3 (300g) ripe bananas, mashed
- 1/3 cup unsweetened almond milk
- 1 tablespoon vanilla extract
- 1/2 cup coconut flour
- 1/3 cup almond flour
- 1/3 cup wholemeal flour
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon ground ginger
- 1 teaspoon baking powder
- 1 tablespoon chia seeds
- 2 tablespoons Natvia
- 1/4 cup walnuts, chopped
- Preheat oven to 170c. Line a loaf pan with baking paper and set aside.
- In a medium bowl, whisk together wet ingredients.
- Combine dry ingredients (except walnuts) in a separate bowl.
- Add dry ingredients to wet ingredients and mix until free of lumps.
- Fold in chopped walnuts and pour batter into the prepared loaf plan. Garnish with walnuts.
- Bake for around 35-40 minutes, or until a toothpick inserted comes out clean. Allow banana bread to rest for half an hour before slicing. This can be stored in the fridge for up to 4 days.
