Olive Mexican Fiesta(Serves 6)
- 1 lb. ground beef
- 1/2 c. chopped onions
- 1 can (16 oz.) whole tomatoes
- 1 can (8 oz.) tomato sauce
- 1 envelope chili sauce mix
- 1 can (15 oz.) red kidney beans, drained
- 1 can (12 oz.) whole kernel corn, drained
- 3 Tbsp. chopped green chilies
- 1 c. pitted ripe olives, halved lengthwise
- 1 c. shredded Cheddar cheese
- 1 pkg. corn tortilla chips
- Brown the
- ground
- beef
- with
- the
- onions
- int large skillet.
- Stir
- in tomatoes, tomato sauce and chili sauce mix. Simmer, uncovered,t
- minutes.
- Stir
- in beans, corn, chilies and olives.
- In a 2-quart casserole, alternately layer tortilla chips (enough
- to
- covertottom) and meat mixture, making several layers
- oftach.
- Sprinkle
- the
- top
- with cheese and arrange the tortilla chips around the edge.
- Bake at 400u0b0 for 15 minutes or until bubbly hot and cheese is melted.
