Fruit Cake Muffins

• 1 1/2 c. diced candied fruit
• 2 1/2 c. raisins
• 1/2 c. apple juice
• 3/4 c. packed brown sugar
• 1/2 c. butter
• 1 egg
• 1 c. all-purpose flour
• 1/2 tsp. baking soda
• 1/2 tsp. salt
• 1/2 tsp. allspice
• 1/2 tsp. cinnamon
• 1/4 tsp. nutmeg
• 1 1/2 c. chopped nuts
• candied cherries
• apple jelly

1. Marinate fruits and raisins in juice overnight.
2. Cream sugar, butter and egg together.
3. Sift together flour and spices and mix with sugar mixture.
4. Add marinated fruit and nuts.
5. Spoon into muffin papers.
6. Top each with a cherry.
7. Bake at 300u0b0 for 30 minutes.
8. Brush tops with apple juice while warm.
9. Add glaze. Melt apple jelly for glaze.
