Fruit Cake Muffins
- 1 1/2 c. diced candied fruit
- 2 1/2 c. raisins
- 1/2 c. apple juice
- 3/4 c. packed brown sugar
- 1/2 c. butter
- 1 egg
- 1 c. all-purpose flour
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1/2 tsp. allspice
- 1/2 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1 1/2 c. chopped nuts
- candied cherries
- apple jelly
- Marinate fruits and raisins in juice overnight.
- Cream sugar, butter and egg together.
- Sift together flour and spices and mix with sugar mixture.
- Add marinated fruit and nuts.
- Spoon into muffin papers.
- Top each with a cherry.
- Bake at 300u0b0 for 30 minutes.
- Brush tops with apple juice while warm.
- Add glaze. Melt apple jelly for glaze.
