Marzipan Filled Shortbread Cookies (Gevulde Koeken)
- 7/8 cup almonds skinless
- 5/8 cup sugar
- 1 egg
- 7/8 cup softened butter
- 2 3/8 cups flour
- 3/4 cup sugar
- lemon Grated zest of a
- 1 egg
- 20 almonds skinless, chopped
- Preheat oven to 180 degrees Celsius
- To make the marzipan, in a blender, mix almonds, sugar and egg to get a smooth paste.
- With an electric mixer, beat butter, flour, sugar, and lemon zest until smooth.
- On a floured surface, roll out the dough to 5mm thick.
- With a cookie cutter cut out 10 circles with 8 cm in diameter.
- Place a large marzipan mound in the center of 8 circles, then top with the remaining 8 circles.
- Seal the edges well.
- Whisk the egg with 1 tablespoon water and brush the cookies.
- Sprinkle it with chopped almonds and bake on a baking sheet lined with parchment paper for about 25 minutes until golden brown.
