Marzipan Filled Shortbread Cookies (Gevulde Koeken)

  1. Preheat oven to 180 degrees Celsius
  2. To make the marzipan, in a blender, mix almonds, sugar and egg to get a smooth paste.
  3. With an electric mixer, beat butter, flour, sugar, and lemon zest until smooth.
  4. On a floured surface, roll out the dough to 5mm thick.
  5. With a cookie cutter cut out 10 circles with 8 cm in diameter.
  6. Place a large marzipan mound in the center of 8 circles, then top with the remaining 8 circles.
  7. Seal the edges well.
  8. Whisk the egg with 1 tablespoon water and brush the cookies.
  9. Sprinkle it with chopped almonds and bake on a baking sheet lined with parchment paper for about 25 minutes until golden brown.
