Potatoes (Paprikas Potatoes) Hungarian By Laszlo
- 2 pounds potatoes
- 1 green pepper
- salt to taste
- 1 teaspoon sweet paprika
- 2 teaspoons oil
- smoked kielbasa or 2 or 3 cups as much as you like gives it a nice smoke flavor., Hungarian Sausage Smoked Kolbasz, Sliced thin
- 1 onion
- 1 clove garlic
- 1 fresh tomato
- Chop the onions finely and then saute them, under cover in the oil until
- they turn golden. Add the paprika and a small amount of water.
- Add the garlic, the tomato, the green pepper and salt; cover again and simmer for half hour.
- Peel, quarter and then add the potatoes. Add a bit more water just to cover the potatoes and keep cooking until the potatoes are tender. Add the sliced Kolbasz.Cook for another 5 minutes, reducing the heat to simmer.
