Empress Beef

  1. Partially freeze steak; slice diagonally 1/4 inch wide.
  2. Pour oil in wok or large skillet.
  3. Heat at high for 1 minute.
  4. Add steak and salt; stir-fry for 5 minutes.
  5. Add snow peas, celery, mushrooms, onion and water chestnuts.
  6. Stir-fry 3 minutes.
  7. Cover, reduce heat and simmer 3 minutes.
  8. Combine water, soy sauce, cornstarch and sugar; stir well.
  9. Add cornstarch mixture to beef mixture and cook
  10. until thickened, stirring constantly.
  11. Serve over rice.
  12. Serves 2 to 4.
