Empress Beef
- 1/2 lb. boneless sirloin steak
- 3 Tbsp. vegetable oil
- 1/4 tsp. salt
- 1/4 lb. fresh snow peas, trimmed
- 3 celery stalks, chopped
- 1 (4 oz.) can sliced mushrooms, drained
- 1 medium onion, sliced and broken apart
- 1/2 c. sliced water chestnuts
- 1/2 c. water
- 1/4 c. plus 1 Tbsp. Kikkoman soy sauce
- 1 Tbsp. cornstarch
- 1 1/2 tsp. sugar
- hot, cooked rice
- Partially freeze steak; slice diagonally 1/4 inch wide.
- Pour oil in wok or large skillet.
- Heat at high for 1 minute.
- Add steak and salt; stir-fry for 5 minutes.
- Add snow peas, celery, mushrooms, onion and water chestnuts.
- Stir-fry 3 minutes.
- Cover, reduce heat and simmer 3 minutes.
- Combine water, soy sauce, cornstarch and sugar; stir well.
- Add cornstarch mixture to beef mixture and cook
- until thickened, stirring constantly.
- Serve over rice.
- Serves 2 to 4.
