Tofu And Black Bean Tacos
- 14 ounces tofu
- 1 1/2 teaspoons chili powder
- 1/2 teaspoon oregano
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon sea salt
- 1 tablespoon olive oil
- 3 cloves garlic minced
- 3 green onions chopped
- 15 ounces black beans
- 12 corn tortillas warmed
- 3 cups spinach chopped
- 2 cups chopped tomatoes
- 1 1/2 cups shredded cheddar
- Put tofu, chili powder, oregano, cumin, coriander, and salt into a bowl and mix together
- Heat oil in a skillet. Add garlic and 2/3 of the green onions and cook 2 minutes.
- Add tofu mixture and cook 10-12 minutes
- Add beans and green onions, stir and cook for another 2 minutes
- Spoon tofu into corn tortillas, top with spinach, tomatoes, and cheese
