Crispy Fried Chicken
- 3 1/2 pounds chicken cut into pieces, drumsticks scored, breasts halved
- 6 1/2 tablespoons all purpose seasoning
- 1 1/4 cups buttermilk
- 2 1/4 cups self-rising flour seasoned
- vegetable oil to deep-fry
- 1/4 cup sour cream
- 1 lemon zested, cut into wedges
- 3/4 cup heavy cream whipped
- mixed greens to serve
- Combine chicken with 2 tbsp seasoning and buttermilk. Toss to coat. Cover with plastic wrap and chill for 6 hours to marinate. Drain chicken and discard marinade.
- Combine seasoned flour and remaining seasoning in an extra-large resealable food storage bag. Add drained chicken pieces. Holding closed bag tightly, shake vigorously until chicken pieces are coated evenly.
- Heat oil in a large heavy-bottomed saucepan over medium heat. Working in batches, deep-fry chicken for 10 mins, or until golden brown and cooked through. Drain on paper towels.
- To serve, whisk together sour cream and lemon zest. Fold in whipped cream. Serve with chicken, mixed greens and lemon wedges.
