Healthy Anzac Biscuits
- 1 cup (150g) whole spelt flour
- 1 cup (100g) rolled oats
- 1/2 cup (90g) Natvia
- 1 cup (100g) desiccated coconut
- 2 tablespoons (40g) maple syrup
- 2 tablespoon (40g) honey
- 1/2 cup (95g) coconut oil
- 1 teaspoon bi carb soda
- 2 tablespoon water
- Preheat oven to 170u0b0C. Line two baking trays with baking paper.
- In a medium bowl, combine flour, oats, Natvia and coconut.
- Warm maple syrup, honey and coconut oil in a small saucepan on low heat, until coconut oil is melted. Remove from heat.
- Mix together the water and bi carb soda in a small jug or bowl, then add to the coconut oil mixture.
- Add the wet ingredients to the dry, and mix until combined.
- Take tablespoons of mixture and roll into balls. Place onto prepared trays. Flatten balls with a fork, and bake for 12 minutes or until golden.
