Jalfrezi Pork Chops With Fragrant Rice

  1. Preheat the oven to 325u0b0F.
  2. Heat 2 tsp of the oil in a large skillet on high heat. Brown pork chops 2 mins each side. Place in a shallow baking dish. Pour cooking sauce over top.
  3. Bake, covered, 1 hour, until pork chops are tender.
  4. Meanwhile, for the fragrant rice, heat remaining 2 tsp oil in a large, heavy-bottomed saucepan on medium heat. Saute onion 4-5 mins, until soft. Stir in rice and spices; cook 1 min. Add stock; bring to a boil. Reduce heat to low; cook 15 mins. Stir in peas and saffron. Let stand, covered, 5 mins. Fluff rice with a fork.
  5. Serve pork with rice and sauce.
