Mediterranean Spaghetti
- 1 pound spaghetti
- 2 tablespoons olive oil
- 1 onion medium, peeled and diced
- 2 cloves garlic peeled and finely chopped
- 3 1/2 ounces sun-dried tomatoes cut into thin strips
- 3 ounces pitted green olives halved
- 2 3/4 cups tomato and basil pasta sauce
- 1/4 pound feta cheese crumbled
- fresh basil for garnish
- Cook the spaghetti in boiling salted water according to the package instructions. Drain.
- Meanwhile, heat the oil in a saucepan and saute the onion, garlic and sun-dried tomatoes until softened. Add the olives, pasta sauce and 1/2 cup water. Bring to a boil and simmer for 3 mins. Season.
- To serve, toss the spaghetti with the sauce and arrange on serving plates. Sprinkle with the feta cheese and garnish with basil.
