Pasta With Tuna And Tomato Sauce
- 5 tablespoons olive oil
- 1 red onion chopped
- 1 red pepper de-seeded and chopped
- 5 3/8 cups chopped tomatoes
- 1 cup tuna in oil cans
- 7/8 pound rigatoni pasta or tortigliono
- 1 lemon zested, plus lemon wedges, to serve
- 5/8 cup basil shredded
- 1/2 cup Parmesan shavings
- basil leaves extra, to garnish
- Heat 1 tbsp oil in a saucepan and sweat onion and pepper for 5 mins until softened. Add tomatoes and bring to a boil. Reduce heat to a simmer and cook gently for 15 mins. Drain tuna and add to pan. Cook gently for 5 mins. Season to taste.
- Meanwhile, cook pasta in boiling, salted water for 12 mins or until just tender. Drain, reserving a little pasta water, then return to pan with reserved water and remaining olive oil. Mix well. Add lemon zest, basil and cheese. Add tuna sauce then transfer to serving bowls. Serve with lemon wedges and basil.
