Baked Pasta Bolognese
- 1 tablespoon vegetable oil
- 1 onion medium, finely chopped
- 2 cloves garlic minced
- 1 pound ground beef
- 4 tablespoons tomato paste
- 3 cups tomato puree
- 8 3/4 ounces pasta shapes large, such as spirals
- 2 eggs lightly beaten
- 7 ounces mozzarella cheese grated
- 1 large tomato sliced
- salad arugula, to serve
- Preheat oven to 425u0b0F. Grease and line an 8 inch springform pan with parchment paper.
- Heat oil in a large pan over medium-high heat. Add onion, garlic and ground beef. Cook, stirring, for 5 mins, or until beef is browned. Add tomato paste and cook, stirring, for 2 mins. Add tomato puree and simmer, uncovered, stirring occasionally, for 12-15 mins, or until sauce thickens.
- Meanwhile, cook pasta in boiling salted water for 10-12 mins, or until al dente. Drain.
- Toss pasta with eggs, ground beef mixture and 1/2 the mozzarella. Season. Transfer to prepared pan. Press mixture firmly into pan. Arrange sliced tomato over top then sprinkle with remaining mozzarella. Bake for 20-25 mins, or until cheese is melted and golden.
- Let cool in pan for 15 mins then cut into wedges and serve with arugula salad.
