Fried Potatoes With Chiles And Onions

  1. Remove the skins from the potatoes and cut into approximately 1" dice (i.e.
  2. quite large).
  3. cut the onion in half down through the growing tip to the root end.
  4. Cut each half into 1/8" thick slices.
  5. heat the oil in a large pan over a high heat.
  6. add the onion slices, cumin and mustard seeds and stir for a few minutes.
  7. add the crushed garlic and chiles, stir and fry for a minute then turn the heat down to low.
