Salami And Ricotta Pizzas
- 2 pizza crusts x 12 inch
- 14 ounces crushed tomatoes
- 1 teaspoon brown sugar
- 12 ounces mozzarella shredded
- 3 1/2 ounces pitted kalamata olives sliced
- 2 japanese eggplants thinly sliced diagonally
- 5 1/4 ounces salami mild, thinly sliced
- 9 ounces ricotta
- 1/3 cup basil leaves
- 7 ounces mixed salad greens to serve
- Preheat oven to 450u0b0F. Place pizza crusts on 2 large baking sheets. Combine tomatoes and sugar in a small bowl. Stir to dissolve sugar. Spoon tomato mixture evenly over crusts, crushing lightly with the back of a spoon.
- Sprinkle crusts with half the cheese, then top with olives, eggplant, and remaining cheese. Add salami and bake for 10 mins.
- Sprinkle with ricotta. Bake for 2-3 mins more or until ricotta is just heated. Remove pizzas from oven. Sprinkle with basil and pepper. Serve with salad.
