Roasted Potatoes With Vegan Sour “Cream”
- 4 large potatoes or 10 medium potatoes - washed and sliced to 1" thickness
- 1/4 cup olive oil
- 1 teaspoon sea salt celtic
- 1 tablespoon basil
- 1 tablespoon oregano
- 3 cloves garlic minced
- 1 cup raw cashews soaked over night and rinsed well
- 1/2 cup coconut milk
- 1 teaspoon onion powder
- 1/4 teaspoon sea salt celtic
- 3 cloves garlic
- 1 teaspoon apple cider vinegar
- 3 tablespoons lemon juice
- For the potatoes: Preheat oven to 400 degrees
- In a bowl, place all the potatoes. Drizzle oil over potatoes and mix well.ndd rest of ingredients and mix well.
- Place potatoes with spices on a cookie sheet, flat side down.
- Bake until edges are golden brown and potatoes are cooked through, about 40 minutes
- For casher sour "cream": Blend ingredients together in high speed blender.
