Pears, Roquefort, Pecans And Cranberries Savory Tart
- 1 2/3 cups flour
- 13/16 teaspoon salt
- 7 tablespoons softened butter
- 4 pears
- 7/8 cup roquefort cheese
- 4 3/8 tablespoons pecans
- 1 cup dried cranberries
- 3 tablespoons cream cheese
- In a large bowl, combine flour, salt, and diced butter.
- Knead everything with your hands.
- Make a well in the center, and pour 75 ml of cold water.
- Working quickly, mix the dough with your fingertips.
- On a lightly floured work surface, mash the dough with the palm of your hand to flatten it.
- Turn it in a ball and wrap it in plastic wrap, place it in the refrigerator for about 30 minutes.
- Preheat oven at 190 degrees Celsius.
- Remove the dough from the refrigerator, 15 minutes before working on it.
- Roll out the dough forming a circle in a lightly floured surface.
- Carefuly turn the dough into a pie dish, lined with parchment paper.
- Spread the cream cheese with a spoon on the bottom of the pie shell, leaving a 1 inch space all around the edge of the crust.
- Peel the pears, cut them into small cubes and place them on the bottom of the pie.
- Crumble the Roquefort, and sprinkle over the pears, as well as the cranberries and the pecans.
- Fold the edges of the dough over the pie.
- Bake for about 20 minutes and serve with green salad.
