Mexican Fiesta
- 4 lb. lean ground beef
- 1 large onion, chopped
- 4 Tbsp. chili powder
- 4 small cans tomato sauce
- 1 can water
- 1 small can tomato paste
- 2 Tbsp. garlic salt
- 1 28-oz. can pinto beans
- Crushed tortillas chips
- Hot cooked rice
- Condiments: grated Cheddar cheese, chopped onion, chopped tomatoes, chopped lettuce, Picante sauce
- Brown ground beef and onion; drain well and transfer to a large pot.
- Add next 6 ingredients and mix well.
- Simmer 1 hour on low heat.
- Layer following ingredients on individual plates as follows: crushed Doritos; hot cooked rice; the meat sauce; grated Cheddar cheese; chopped onion; chopped tomatoes; chopped lettuce, and Picante sauce.
- Makes 8 servings.
