Braised Beef Noodle Soup

  1. Peel off the skin of potato and dice the potato
  2. Peel off the skin of carrots and cut carrots into small cubes
  3. Cut 2 spring onions into small sections
  4. Peel off the skin of ginger and cut the ginger into small pieces
  5. Cut the onion into small pieces
  6. Quarter the tomatoes
  7. Dice the beef
  8. Add cooking oil in a sauce pan, when the oil is hot, pour the spring onion, onion and ginger into the sauce pan and stir fry them
  9. When you smell the fragrance of all the ingredients, add the beef in the sauce pan, continue stir frying , then add the thyme, potato and carrots, stir fry them
  10. Turn off the stove and move the food in sauce pan to a clay pot
  11. Add 4 bowels of water into the clay pot, turn on the stove, and add the tomatoes into the clay pot
  12. Add 3 star anise and 1 tea bag into the clay pot
  13. Use high heat to cook until the water is boiling, then tune to lower heat, cook for 1 hour first
  14. Add some light soy sauce and dark soy sauce into the clay pot, then cook for another 1 hour
  15. 10 minutes before serving, add some salt into the clay put
  16. Now use high heat to cook the noodle, first boil the water, at the same time, pour some light soy sauce, dark soy sauce, vinegar and sesame into a bowel
  17. Add the noodle and baicai into the boiling water, and add some salt into the noodle
  18. When the foam is almost out of the sauce pan, add some water, then go on cooking until the next time the foam is almost out, add the water again. You should repeat it for 3 times, then the noodle is cooked
  19. Pour the noodle and beef into the bowl, then scatter some chopped spring onion
