Pork Tenderloin With Apples And Favol Figs
- 6 figs candied
- 2/3 pound pork tenderloin
- thyme
- rosemary
- 2 apples
- 3 1/2 tablespoons butter
- Preheat oven to 200 degrees Celsius.
- Cut the figs in half.
- Cut the pork tenderloin in 2 pieces. Make a cut in the center of the tenderloin with a large knife. Insert figs inside the cut.
- Heat 30 grams of butter in an oven-proof skillet on the stove top. Add pork tenderloin, thyme, rosemary. Create coloring in the pan by basting the meat regularly with the melted butter.
- When pork is browned, place skillet in oven, and bake for 20 minutes.
- Wash and dry the apples. Cut them into thin slices, keeping the skin. Cook over low heat in a pan with the remaining butter.
- Cut the tenderloin. Serve with apples and arugula.
- Serve with fig chutney and balsamic vinegar as a side dish.
