Sweet And Sour Pork Chops
- 4 to 6 pork chops
- 1 medium onion, thinly sliced and separated into rings
- 1 medium carrot, thinly sliced
- 1 (8 oz.) can chunk pineapple, drained (reserve liquid)
- 1 clove garlic, minced
- 1/3 c. brown sugar, packed
- 1/3 c. red wine vinegar
- salt as desired
- 1/4 c. ketchup
- 1 Tbsp. soy sauce
- 1 medium green pepper, sliced
- 2 tsp. cornstarch
- Place pork chops into roaster.
- Cover with onion rings, carrot slices, pineapple, green pepper and garlic.
- Mix brown sugar, vinegar, ketchup and soy sauce; pour over pork chops.
- Cook at 350u0b0 for about 1 1/2 hours.
- Remove pork chops, vegetables and pineapple from liquid.
- Mix cornstarch and pineapple juice into the pan.
- Cook until thick and pour over pork chops.
- Serve with rice.
