Stuffed Squash
- 1 doz. yellow, long neck squash
- 1/2 lb. hamburger
- 1 c. cooked rice
- 1 or 2 raw tomatoes
- 1 finely chopped onion
- 1 small chopped green pepper
- a few sprigs of parsley, chopped
- 1 c. sour cream
- 1/2 c. milk
- 1 Tbsp. salt
- 1 1/2 tsp. sugar
- Halve
- each squash and hollow out the centers.
- Mix the removed
- squash
- portions
- with the hamburger, rice, tomatoes, onion,
- green
- pepper
- and
- parsley.
- Mix well, then stuff the squash with the mixture.
- Place 1 layer into a baking dish and pour
- a portion of the sour cream, which has been diluted with the milk, over the first layer.
- Make another layer of squash and pour
- remaining sour cream over it.
- Bake 2 hours at 300u0b0 and serve hot.
- Sprinkle with chopped parsley.
