Broccoli And Crab Bisque(Yields 6 To 8 Servings)
- 1 c. sliced leeks or onion
- 1 c. sliced fresh mushrooms
- 1 c. fresh or frozen chopped broccoli, thawed and drained
- 1 clove minced garlic
- 1/4 c. butter or margarine
- 1/4 c. all-purpose flour
- 1/4 tsp. dried thyme, crushed
- 1/8 tsp. pepper
- 1 small bay leaf
- 3 c. chicken broth
- 1 c. light cream
- 3/4 c. shredded Jarlsberg or Swiss cheese (3 oz.)
- 1 (6 oz.) pkg. frozen crab meat, thawed and drained
- In a 3-quart saucepan cook leeks, mushrooms, broccoli and garlic in butter or margarine until crisp-tender.
- Blend in flour, thyme, 1/8 teaspoon salt, pepper and bay leaf.
- Add chicken broth and cream all at once.
- Cook and stir 1 minute more.
- Add cheese. Stir until cheese is melted.
- Add crab meat.
- Heat through.
