Clafouti With Zucchini, Raw Ham, Feta And Pine Nuts

  1. Preheat the oven to 350F.
  2. Slice the zucchini into thin strips lenghwise.
  3. Heat the olive oil in a pan and fry the zucchini for 4 to 5 minutes. Season with salt.
  4. In a bowl, beat the eggs, gradually adding the flour and cream until smooth.
  5. If you have lumps, use a blender to break them up.
  6. Add the grated parmesan.
  7. In an ovenproof dish, place the ham, chunks of feta cheese, zucchini strips, and egg mixture.
  8. Sprinkle the top with pine nuts and then pepper (do not add more salt because the Parmesan cheese and ham are already salted).
  9. Cook for 25 minutes.
  10. Serve hot.
