Apple, Walnut & Banana Bread
- 2 bananas
- 2 apple peeled and cut into small squares
- 1/3 cup coconut sugar Other sugars work too but you may only use 1/4 cup
- 3/4 chickpea flour Again other flours work fine
- 1 cup almond meal
- 1 teaspoon maple syrup Alternates are honey or agave
- 1 teaspoon baking soda
- 1 pinch salt
- 1 teaspoon cinnamon
- 1/4 cup chopped walnuts
- nuts or Seeds to sprinkle on top - I used pecans
- Preheat oven to 180u0b0C. Line a bread pan with Baking Paper.
- In a bowl, mash the bananas with a fork.
- Add the apple cubes, Coconut sugar, flour, Almond Meal, baking soda, salt, syrup, nuts & cinnamon to the bowl, and mix well. Pour into bread pan, sprinkle with chosen toppings
- Bake for 45-60 minutes
- Allow to cool for 15 minutes then transfer out of pan
