Moules Marinieres - Mussels In White Wine
- 1 tablespoon olive oil
- 1 onion finely chopped
- 2 cloves garlic crushed
- 1/2 cup white wine
- 1/2 lemon juiced
- 1 cup heavy cream
- 1 pound mussels scrubbed and bearded
- 2 tablespoons chopped parsley finely
- crusty bread to serve
- Heat oil in a large skillet on medium heat. Saute onion and garlic for 2-3 mins, until onion is tender.
- Stir in wine and lemon juice. Bring to a boil. Reduce heat to low. Simmer for 2-3 mins until liquid has reduced by half.
- Stir in cream and season to taste. Bring to a boil. Reduce heat to low and simmer for 3-5 mins until sauce thickens slightly.
- Add mussels, stirring to coat with sauce. Simmer, covered, for 3-5 mins, until mussels open (discard any unopened ones). Stir in parsley.
- Serve mussels with bread for dipping.
