Taco Pie (To Be Used As A Dip For Nachos)
- 1 lb. ground beef
- 1 pkg. taco seasoning
- 1 can Ro-Tel
- 1 (16 oz.) can refried beans
- 1 (8 oz.) carton sour cream
- 1 lb. Mexican Velveeta cheese
- 1/4 c. grated Cheddar cheese
- 3 or 4 green onions, chopped
- black olives, sliced (however many preferred)
- Brown and drain beef, add taco seasoning according to package directions.
- Place in bottom of shallow dish and (9 x 13-inch is fine).
- Allow to cool.
- Layer sour cream over ground beef.
- Layer refried beans over sour cream.
- Melt Velveeta and add drained Ro-Tel to Velveeta cheese.
- Pour this over refried beans; top with grated Cheddar cheese.
- Bake at 300u0b0 for 30 minutes.
- Garnish with green onions and olives.
- Serve with tortilla chips or nachos. Delicious!
