Shrimp Pozole
- 1 tablespoon vegetable oil
- 1 onions medium, chopped
- 2 red bell pepper, sliced
- 2 tablespoons green bell pepper, sliced
- 2 cloves garlic finely chopped
- 1 teaspoon dri oregano leaves, crush
- 1 tablespoon chipotles in adobo
- 2 knorr shrimp flavor bouillon cube
- 3 cups water
- 31 ounces hominy drained and rinsed
- 1 1/2 pounds uncook medium shrimp, peel and devein
- 1 lime juice
- 1/4 cup chopped fresh cilantro
- 2 tablespoons all-purpose flour
- Heat oil in a large stockpot over medium heat and cook onion and peppers until tender, about 4 minutes, stirring occasionally. Stir in garlic, oregano, chipotle and tomato paste and cook about 1 minute. Sprinkle in flour and cook about 2 minutes, stirring frequently.
- Stir in water, Knorr(R) Shrimp flavor Bouillon Cubes and hominy and bring to a boil. Reduce heat, add shrimp and simmer covered until shrimp turn pink, about 5 minutes. Stir in lime juice and cilantro. Garnish with diced avocado, sliced lettuce, diced radishes, cheese, chopped onion and lime wedges.
