Pork Knuckle Tomato Date Curry In Pita
- 1 pound pork kidneys 1 inch cubes
- 1 onion medium diced
- 2 cans diced tomatoes
- 2 tablespoons curry powder
- 1/4 teaspoon allspice ground
- 1/4 teaspoon clove ground
- 1/2 teaspoon cinnamon ground
- 1 1/2 tablespoons cumin ground
- 1/4 teaspoon cayenne
- 1/2 cup dates chopped
- 1/2 cup golden raisins
- 3 cloves garlic minced
- 1 orange juiced
- 1/2 cup greek yogurt
- 2 tablespoons mint chopped
- 1. Season cubed pork with salt and pepper
- 2. Brown pork in tall-sided skillet until brown on all sides, remove and save
- 3. Add onion and cook over medium/low until onion is soft and lightly browned
- 4. Add tomatoes, spices, dates, raisins, and garlic
- 5. Bring to a boil and simmer for 15 minutes, adjust flavor with salt
- 6. Add pork with reserved juices and orange juice
- 7. Cook for 10 minutes until meat is just cooked through
- 8. Finish with yogurt and mint
- 1. Serve over rice with vegetables or inside a pita
