Baked Hake Medallions With Cream And Carrot

  1. Pre-heat oven to 180-200u0b0C.
  2. In a baking pan, place the thawed hake medallions and season with salt, juice of half a lemon and a drizzle of olive oil. (Tip: If the medallions are still frozen, season and place in the oven for 10 minutes to thaw. Drain accumulated juices and continue with the rest of the recipe).
  3. Place the grated carrot over the medallions. Drizzle with the cream. Sprinkle with the olives and the bacon cubes.
  4. Top with cheese. Bake in a hot oven for about 25-30 minutes.
  5. Remove from oven when lightly browned. Serve with mashed potatoes.
