Turkey And Black Bean Chili

  1. Cook turkey in a large nonstick skillet until browned, stirring to crumble.
  2. Drain.
  3. May wish to microwave turkey, drain well on paper towels.
  4. Heat oil in skillet.
  5. Saute onion, garlic about 5 minutes.
  6. Add chili powder, oregano, cumin.
  7. You may want to use half amounts of these spices to start.
  8. Return turkey to skillet; stir in water, prunes and beans.
  9. Bring to a boil; reduce heat to simmer, uncovered, 5 minutes.
  10. Adjust seasonings to taste. Serve chili over rice.
  11. Yield: 5 servings.
