Turkey And Black Bean Chili
- 1 1/2 lb. ground turkey
- 1 tsp. cooking oil
- 1 1/4 c. onion, chopped
- 3 garlic cloves, chopped
- 1 Tbsp. chili powder
- 2 tsp. oregano
- 1 tsp. cumin
- 1/2 tsp. salt, optional
- 2 1/4 c. water
- 12 prunes, pitted and chopped
- 1 can (15 oz.) black beans, undrained
- Cook turkey in a large nonstick skillet until browned, stirring to crumble.
- Drain.
- May wish to microwave turkey, drain well on paper towels.
- Heat oil in skillet.
- Saute onion, garlic about 5 minutes.
- Add chili powder, oregano, cumin.
- You may want to use half amounts of these spices to start.
- Return turkey to skillet; stir in water, prunes and beans.
- Bring to a boil; reduce heat to simmer, uncovered, 5 minutes.
- Adjust seasonings to taste. Serve chili over rice.
- Yield: 5 servings.
