Walnut Banana Bread With Chocolate Chips
- 2 medium eggs
- 1 teaspoon vanilla extract
- 1/2 cup sugar
- 1/3 cup vegetable oil
- 3 bananas peeled and sliced
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 2 teaspoons cinnamon
- 2/3 cup lowfat milk
- 5 ounces walnuts chopped
- 3 ounces dark chocolate chopped
- powdered sugar for dusting
- 1 cup heavy cream whipped, optional
- Preheat oven to 350u0b0F. Whisk together the eggs, vanilla extract, sugar and oil, then fold in the banana slices, flour, baking powder, cinnamon and a pinch of salt. Stir in the milk, 2/3 of the walnuts, and the chocolate.
- Transfer batter to a cake tin, smooth the top, sprinkle with the remaining nuts and bake for about 50-60 minutes, until an inserted knife comes out clean. The cake should still be moist.
- Leave to cool for 15-20 minutes in the pan before turning out and cooling on a wire rack. Dust with powdered sugar and serve with whipped cream.
