Pork And Couscous Patties With Spinach Salad

  1. Combine couscous with 1/2 cup boiling water. Cover with plastic wrap and set aside for 5 mins, or until liquid is absorbed. Using a fork, fluff and separate grains. Let cool then mix with ground pork, carrot, cilantro and garlic. Shape into 4 patties.
  2. Heat 1/2 the oil in a frying pan over medium heat. Cook patties for 3 mins per side, or until browned and cooked through. Drain on paper towels.
  3. Meanwhile, steam sweet potatoes for 5-6 mins, or until tender. Let cool slightly then mix with spinach, pine nuts, ricotta, lemon juice and remaining oil. Season.
  4. Serve patties with salad.
