Pork And Couscous Patties With Spinach Salad
- 3 1/2 ounces couscous
- 8 3/4 ounces ground pork
- 1 medium carrot coarsely grated
- 1/2 cup cilantro leaves fresh, chopped
- 1 clove garlic minced
- 1/3 cup olive oil
- 10 1/2 ounces sweet potatoes peeled, cut into 3/4 inch cubes
- 2 ounces baby spinach
- 1/4 cup pine nuts toasted
- 2 1/2 ounces ricotta cheese crumbled
- 1 tablespoon lemon juice
- Combine couscous with 1/2 cup boiling water. Cover with plastic wrap and set aside for 5 mins, or until liquid is absorbed. Using a fork, fluff and separate grains. Let cool then mix with ground pork, carrot, cilantro and garlic. Shape into 4 patties.
- Heat 1/2 the oil in a frying pan over medium heat. Cook patties for 3 mins per side, or until browned and cooked through. Drain on paper towels.
- Meanwhile, steam sweet potatoes for 5-6 mins, or until tender. Let cool slightly then mix with spinach, pine nuts, ricotta, lemon juice and remaining oil. Season.
- Serve patties with salad.
