Easy Apricot Pie

  1. Preheat the oven to 450 degrees at least 20 minutes before you start baking.
  2. Pull the apricot halves apart. Pile them messily into an unbaked pie shell.
  3. In a small saucepan, melt the stick of butter.
  4. Add the flour and the sugar to the melted butter and stir to combine. It will be very thick.
  5. Remove from the heat.
  6. Grate fresh nutmeg directly into the butter/flour/sugar mixture and stir until combined.
  7. Using your hands, crumble the hot crumb mixture over the apricots until they are fully covered.
  8. Place the pie directly onto a baking stone or on the lower level of the oven.
  9. After 10 minutes, lower the temperature to 350 degrees and cook until the pie is completely cooked. Note: Because you are baking a raw pie crust, it will be difficult to know when the crust is done. Bake at least 40 minutes, and cover the top with foil to prevent the top from burning.
  10. Cool completely on a baking rack before serving.
